Pucker up, it’s lemon time.
This by far is my favorite cake, it is super moist and filled with lemon flavor all the way through from the icing to the cake. So if you love lemon this is the cake for you.
On a hot summer day this is the best cake, with a nice cup of coffee or a cold glass of milk you will enjoy making this cake over and over.
One day I was getting ready to make a strawberry cake but I didn’t have all the ingredients and so I decided to add lemons instead.
You will fall in love with this cake and will continue to make it over and over.
Easy Homemade Lemon Cake
Ingredients
2 ½ cups all purpose flour or Cake flour
1 ½ cups granulated sugar
½ teaspoon salt
2 ½ teaspoons baking powder
1 ½ butter stick (soften)
4 eggs med (room temp)
2 tablespoon lemon extract
or 1 lemon juice
1 lemon zest
1 ½ cups milk (room temp)
Lemon Frosting
2 cups powdered sugar
1 lemon zest (one lemon)
1 lemon juice (one lemon)
Preheat the oven to 350 degrees F, Grease and flour or spray bundt pan or pans.
Mix all wet ingredients first. Mix sugar, eggs and butter in a large mixing bowl. Next add lemon extract or lemon juice( whichever you prefer) to the mixture and mix thoroughly then add lemon zest. Mix flour (sifted), baking powder and salt in a medium mixing bowl. Add by alternating Flour mixture and milk to wet mixture. Mix until all ingredients are thoroughly mixed. Add mixture to greased bundt pan or 2, 9inch pans. Let mixture bake for 30=35 minutes, depending on the pan or pans used.
Prepare your icing while the cake is baking. This is the simplest icing you can make. Pour powdered sugar into a medium sized bowl, add lemon zest first , then add lemon juice slowly mixing in with sugar to obtain the consistency you want.
Once the cake is cooked, place on a cooling rack for about an hour to 2 hours and let cool. After the cake has cooled, drizzle icing all over the cake. Give icing a few minutes to harden and enjoy!
