Simple and Easy Microwave Pecan Candy
If you love pecan candy you are gonna love this recipe. I must say, I am from the old school cooking candy over the stove, does that tell my age, of course not Lol. When I was little it was a treat to have Pecan Candy and we were so happy when we got it, I know I was. When I got older I understood why It was not made as often as it was. It took time to cook over a hot stove, stirring and watching for over an hour praying you cooked it long enough. Sometimes it didn’t come out as it should have. Sometimes it came out sticky and wouldn’t harden. That was nerve racking, so needless to say I didn’t make it often.
One day my neighbor brought us some Pecan Candy for Christmas. It was delicious and it melted in your mouth. She told us, well her husband did cause he delivered it, he said “My wife sent you this, it was made in the Microwave”, and he stressed the microwave. So my husband thanked him and we took the tin package. As soon as he left I opened it and quickly took a piece and it melted in my mouth, it was so rich, creamy and delicious. I know I ate 2, maybe 3 pieces that day. I could have gone into sugar shock lol. So I began to research, was there such a thing as Microwave Pecan Candy? I had never heard of such a thing. Low and behold there was. So needless to say I had to make it, and on my first try it came out perfect !
This absolutely changed my life, when it came to making Pecan Candy. Now I make it for my treat tables, parties, get togethers and it’s an all time favorite.
It’s so easy you won’t go back to the old way of making it. So go ahead and try it, you will never go back to the old way of making Pecan Candy again and that’s a promise
2 cups chopped pecans
1 14 oz can of sweetened condensed milk
1/2 stick of butter
1 cup of sugar
1 tablespoon vanilla extract
Parchment paper
Chop pecans into small pieces and place in a large plastic bowl. Place parchment paper on a dry surface.
You will need a large plastic(microwaveable) bowl —-do not use a glass bowl as it will burn the mixture.
Put sugar, condensed milk and butter into the bowl (don’t mix) and place in the microwave for 3 minutes.Take the bowl out and stir the mixture together.
Place back into the microwave for 2 ½ minutes, watching to make sure the mixture doesn’t overflow. Take mixture out and stir about 10 sec
Place the mixture back in the microwave for 2 minutes, watching to make sure the mixture doesn’t overflow. Take the mixture out and stir for about 10 sec.
This time place in the microwave for 30 sec, take out stir 10 sec, repeat the 30 sec cooking time for 5 times.
Consistency should be bubbly and getting stiff, if not you may have to repeat 1 or 2 more times for 30 sec. Intervals (this depends on the voltage of your microwave).
Take the bowl out of the microwave when mixture is ready, quickly add pecans and vanilla extract and stir (be careful this is very hot).
Using a tablespoon drop candy mixture onto the parchment paper.
The recipe will yield 15-20 small pieces.
Let your Candy cool for about 1 hour or until it sets and enjoy and please share so you don’t go into sugar shock 🙂
